Curry Cauliflower Soup with Ginger Vitality
Try this hearty cauliflower soup recipe when you need a simple meal that will warm you up and fill you up. Essential oil recipes are a great way to create unique and exotic flavors with just a touch of oil. Spiced with curry powder and Ginger Vitality™, this easy cauliflower soup has a complex flavor that’s tasty enough to make you forget take-out. Plus, coconut milk gives it a rich, creamy flavor you’ll instantly fall for. Keep this recipe vegan by skipping the suggested garnish.
Ingredients:
1 pound cauliflower
2 lemon slices
1 bay leaf
1 cup vegetable stock
2 cups coconut milk
3–4 tablespoons soy milk
2 drops Ginger Vitality™ Essential Oil
1–2 teaspoons curry powder
1 pinch sea salt
For optional garnish:
½ cup cream
1–2 drops Black Pepper Vitality™ Essential Oil
Instructions:
1. Remove the leaves from the cauliflower and cut into small florets. Boil with the lemon slices and bay leaf. As soon as cauliflower is soft, remove it and discard broth.
2. Puree cauliflower florets with vegetable stock and coconut milk until smooth. Briefly boil the mixture in the pot. If soup is too thick, add more broth.
3. Remove pot from heat. In a separate dish, combine soy milk, Ginger Vitality, and curry powder. Whisk the mixture into the soup until well incorporated.
4. Season with sea salt and serve.
Tip: To garnish, whip ½ cup cream with 1–2 drops of Black Pepper Vitality until thick and place 1 spoonful on each serving of soup.
Thai Soup

With just a drop or two of some of our favorite Vitality™ essential oils, you’ll have a pot of light-but-satisfying soup that will become one of your favorite essential oil recipes!
Ingredients:
1 cup uncooked basmati rice
2 tablespoons unsalted butter
1 pound medium shrimp, peeled (or try chicken or tofu)
Kosher salt
2 drops Black Pepper Vitality™
2 drops Lemongrass Vitality™
2 cloves garlic, minced
1 onion, diced
1 red bell pepper, diced
1 tablespoon freshly grated ginger
1 drop Ginger Vitality™
2 tablespoons red curry paste
2 (12-ounce) cans unsweetened coconut milk
4 cups vegetable stock
Juice of 1 lime
2 tablespoons fresh cilantro, chopped
Instructions:
1. Cook basmati rice in a saucepan following package directions; set aside.
2. Melt butter in a large pot or in a Dutch oven over medium-high heat. Add shrimp and salt to taste. Cook, stirring occasionally, until pink, about 2–3 minutes. Remove shrimp to a small bowl and set aside.
3. Add all vegetables (garlic, pepper, onion) to the pot. Cook, stirring occasionally, until tender, about 3–4 minutes. Stir in ginger until fragrant, about 1 minute.
4. Mix in curry paste until well combined, about 1 minute. Gradually whisk in coconut milk, vegetable stock, and Vitality oils; cook, stirring gently, until fully blended.
5. Bring to a boil; reduce heat and simmer until the soup thickens.
6. Stir in rice, shrimp, lime juice, and cilantro.
7. Season with salt and pepper to taste.
8. Serve and garnish with fresh lime wedges and sprigs of cilantro.

Ingredients:
1 tablespoon olive oil
1 pound ground chicken, turkey, or chopped mushrooms for a vegetarian option
2 tablespoons red curry paste
4 cloves garlic, finely chopped
1 red bell pepper, diced
1 cup cabbage, chopped
8 ounces water chestnuts, drained and diced
¼ cup hoisin sauce
4 green onions, chopped
2 drops Ginger Vitality™ essential oil
1 drop Basil Vitality™ essential oil
Salt and pepper to taste
½ head iceberg lettuce
Instructions:
1. Spritz cabbage, red pepper, green onions, and lettuce with Thieves Fruit & Veggie Spray, rinse, and cut.
2. Heat olive oil in a large skillet until very hot. Add ground chicken or turkey and cook about 3 minutes on medium-high heat until it begins to brown.
3. Add red curry paste, garlic, diced peppers, cabbage, and water chestnuts and stir-fry for another 3 minutes.
4. Add hoisin sauce and green onions and toss.
5. Stir in Ginger Vitality and Basil Vitality essential oils.
6. Add salt and pepper to taste.
7. Transfer cooked chicken to a bowl.
8. To serve, place spoonfuls of filling into pieces of lettuce.
