Lemon Vitality Essential Oil

Originally native to Asia, the lemon tree wasn’t common in Europe until the 16th century. It is part of the evergreen family and reaches a height of about 20 feet. Lemon Vitality essential oil has a fresh, citrusy flavor that can be used to enhance the flavor of food and beverages. How to Use Lemon  Essential Oil

Vitality Oils Conversion Tip

There are so many wonderful recipes out there where you can easily substitute your Young Living Vitality Oils for the same fresh or dried ingredient; try it in some of your own favorites. There isn’t a hard rule for how to do this. All of our tastes in strength in flavor are different. When in doubt try less. You can always add more if you like.

When you are cooking with Vitality essential oils, keep in mind that essential oils are volatile.  This means that the oil molecules want to escape into the air; they will dissipate.  When you add heat to the equation, it makes them escape more quickly.  With certain protein-based dishes like chicken, I find that I get more flavor when I add the Vitality oils to the dishes when they are finished.  When I have something that I have to refrigerate, such as a fruit salad,  I’ll add the oil just before serving.  Experiment – see what works for you.

Here is a chart to help you with Vitality oil conversion.  Again, it is a guideline – flavor to your liking.

  • 1 Citrus Fruit, juiced = 10 to 15 Drops of a Vitality oil
  • 1 Tablespoon Herbs or Spices = 1 Drop or less of a Vitality oil.
  • 1 Teaspoon Herbs or Spices = Dip a toothpick in the Vitality oil. Swirl the toothpick through the wet ingredients and mix.

Dill Veggie Dip

Ingredients

  • 2 cups plain Greek yogurt
  • 6 drops Dill Vitality essential oil or 1 tablespoon dried dill weed
  • 2 drops Lemon Vitality essential oil or ½ teaspoon lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon onion powder
  • ½ teaspoon Himalayan pink salt

Directions

  1. Combine all ingredients in a blender, bowl, or zip-top bag.
  2. Mix thoroughly.
  3. Refrigerate for 3 hours.

 

Try dipping your favorite veggies—including carrots, celery sticks, bell peppers, and snap peas—in this dip for a delicious snack or side dish.

Simple Vinaigrette

Ingredients

  • 2 tablespoons apple cider vinegar
  • 1 teaspoon honey
  • ¼ teaspoon salt
  • ½ teaspoon ground mustard
  • 1 tablespoon grated onion
  • 2 drops Lemon Vitality essential oil
  • 4 tablespoons extra virgin olive oil

 

Directions

  1. Whisk all ingredients together until well combined.

Note

I really like to use this on a main course salad made with organic mixed greens, grilled chicken (or use any leftover chicken that you have on hand), Young Living organic dried Wolfberries, shaved or shredded Parmesan cheese, and walnuts.

Roast Chicken with Lemon and Thyme Vitality Oils

Vitality™ oils, chicken, and lemon make a perfect combination! This roast chicken is a total crowd pleaser and wonderful as leftovers for yummy, healthy lunches.

This delicious recipe includes this Oregano Vitality, Lemon Vitality and Thyme Vitality. Remember that when cooking with Vitality essential oils, because of their potency, we recommend using only 1-2 drops at first, or even the toothpick method: Stick a toothpick through the oil dropper to absorb the oil, then swirl the toothpick through wet ingredients. Give it a taste, and gradually add more flavor to your liking.

 

Ingredients

  • 1 whole chicken
  • 1 lemon, sliced
  • 1 onion, sliced
  • 1 drop Oregano Vitality
  • 1 drop Lemon Vitality
  • 1 drop Thyme Vitality
  • Salt and pepper to taste
  • ½ cup organic butter or ghee

Directions

  1. Preheat your oven to 450 degrees.
  2. Rinse your chicken with cold water inside and out, and dry well with paper towels.
  3. Place lemon and onion slices in the bottom of an oven-safe skillet or roasting pan and in the cavity of the chicken.
  4. Mix the Oregano Vitality, Lemon Vitality, Thyme Vitality, and butter together with the salt and pepper in a small bowl.
  5. Rub half of your oil mix under the skin of the breast side and back side. Use the remaining half of the oil mixture to brush on the chicken, after it has cooked-cover until needed. Using some kitchen twine, tie up the chicken legs and wings. This makes for more uniform cooking.
  6. Place your chicken breast-side-up in the pan. Place in your preheated oven, and immediately reduce the heat to 375 degrees.
  7. Roast your chicken for approximately 20 minutes per pound, or until the temperature of the breast meat registers at 180 degrees.
  8. Remove the chicken from the oven, and let rest for 10 minutes in the pan. After the chicken has cooled, remove to a cutting board and let rest for an additional 10 minutes before carving. Brush the remaining oil mixture onto your chicken before you serve. Enjoy!

Yogurt-Filled Einkorn Crepes

Ingredients

  • 1 1/2 cups Gary’s True Grit™ Young Living Einkorn Pancake and Waffle Mix
  • 2 cups water or milk of your choice
  • 4 eggs
  • 2 teaspoons vanilla
  • 2 tablespoons Yacon Syrup, cane juice crystals, or sweetener of your choice.
  • 1/2 teaspoon salt
  • 4 tablespoons melted butter
  • 4-6 drops Lemon Vitality essential oil
  • Zest of one lemon

Directions

  1. In a blender, combine all ingredients and blend until smooth.
  2. Cover and refrigerate 1 hour.
  3. Heat a skillet over medium-low to medium heat and brush with coconut oil or butter.
  4. Pour about 1/4 cup of batter into the pan; tip pan to spread the batter to the edges.
  5. When bubbles form on the top and the edges are dry, flip over and cook until lightly browned on the other side and edges are golden.
  6. Remove crepe from pan and keep warm on a plate covered with a cloth.
  7. Repeat with remaining batter.

Makes approx. 8 crepes

 

Crepe Filling

Ingredients

  • 1 cup plain Greek yogurt
  • 5 drops Lemon Vitality essential oil or to taste
  • 1 teaspoon vanilla
  • 1 teaspoon honey

Directions

  1. Mix thoroughly in a blender or bowl to combine all ingredients.
  2. Add yogurt filling to fresh or thoroughly thawed crepes.
  3. Add fresh sliced strawberries and drizzle with Ningxia Berry Syrup.

Strawberry Lemonade

 

 

Ingredients

  • 2 cups strawberries
  • 4 cups water
  • Juice of 1 lemon (for added tartness)
  • 5 drops Lemon Vitality essential oil
  • Agave nectar or honey to taste

 

Directions

  1. Puree strawberries in a blender or food processor.
  2. Pour into pitcher, and then add water, lemon juice, and Lemon Vitality essential oil.
  3. Mix well and sweeten with agave or honey to taste.

Lemony Peas

 

Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 2 cups frozen peas, thawed and drained
  • 2-3 drops Lemon Vitality essential oil
  • Salt, to taste

Directions

  1. Heat olive oil in a large frying pan over medium heat.
  2. When hot, add peas.  Cook until softened, 3-5 minutes.
  3. Remove from heat and add salt and Lemon Vitality essential oil to pan.  Adjust seaonings to taste and serve warm.

Homemade Hummus

Ingredients

  • 1 can organic garbanzo beans, drained
  • 2 cloves garlic peeled
  • 2 Tablespoons cold pressed olive oil
  • 2 tablespoons Tahini
  • Juice from 1/2 lemon
  • 2 drops Lemon Vitality essential oil
  • 1 drop Rosemary Vitality essential oil
  • 2 teaspoons Himalayan Sea Salt

 

Directions

  • Blend in a food processor until smooth.
  • Chill in refrigerator for 30 minutes.
  • Serve with vegetables, pita bread, or your favorite crackers.

Lemon Sorbet

 

 Ingredients

  • 2 cups water
  • 1-1/2 cups organic evaporated cane juice crystals
  • 2 drops Lemon Vitality essential oil
  • 1 cup fresh lemon juice

 

Directions

  1. Create a syrup by combining water and evaporated cane crystals in a small saucepan.
  2. Bring to a boil and cook until evaporated cane juice crystals are dissolved, stirring occasionally.
  3. Remove from heat and cool to room temperature.
  4. Combine syrup, Lemon Vitality essential oil, and lemon juice in a medium-sized glass or stainless steel bowl and mix until thoroughly combined.
  5. Cover and chill in refrigerator for 2-3 hours.
  6. Churn in an ice creammaker according to manufacturer’s instructions.
  7. Cover and freeze until ready to serve.

Homemade Lemon-Lime Guacamole

Ingredients

  • 2 large ripe avocados (seeded and mashed)
  • 1 cup red onion (finely chopped)
  • 2 cloves garlic (crushed)
  • 2 drops Lemon Vitality essential oil
  • 2 drops Lime Vitality essential oil
  • 1 small Roma tomato (diced)
  • 2 Tbsp fresh cilantro leaves (finely chopped)
  • 2 Tbsp sour cream (optional)
  • Salt to taste

Directions

  1. Add avocado flesh to small mixing bowl and smash with a fork.
  2. Mix in the red onion, crushed garlic, Lemon Vitality  essential oil, Lime Vitality essential oil, diced tomatoes, chopped cilantro, sour cream and salt to taste.
  3. Add more lemon and/or lime essential oil, 1 drop at a time, to taste.
  4. Serve with tortilla chips.

Lemon Strawberry Swirl Bread

Ingredients

  • 1/2 cup butter, softened
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 2 eggs
  • 1 teaspoon baking soda
  • 1 1/2 cups flour
  • 2-3 drops of Lemon Vitality essential oil
  • 1/4 cup lemon juice (2 medium lemons)
  • 1 cup strawberries, chopped
  • 2 tablespoons strawberry jam

 

Directions

  1. Preheat the oven to 350 degrees.
  2. Beat the butter and sugar until they are creamy. Add eggs and vanilla and beat to incorporate.
  3. Combine the baking soda and the flour. Beating slowly, add the flour mixture to the butter mixture.
  4. Stir in the lemon juice, Lemon Vitality essential oil, and the strawberries until combined. Note: You can coat the strawberries in a little bit of flour to stop them from sinking to the bottom if desired.
  5. Pour the mixture into a greased 9 x 5 pan. Spoon the strawberry jam on top of the batter. Taking a knife, swirl the strawberry jam through the batter, making sure to not to over swirl the jam.
  6. Bake for 1 hour to 1 hour and 10 minutes or until the toothpick inserted in the center comes out clean. Cool for 10-20 minutes in the pan and then remove. Cool completely on the cooling rack before slicing.

 

Note: You could add a little more Lemon Vitality oil to this bread by making your favorite simple glaze and adding a drop or two to the blend before serving this tasty bread.

Vitality-Infused Marinades

 

Light Up Your Summer with Vitality-infused Marinades

Citrus Marinade

Ingredients

  • 3/4 cup olive oil
  • 1/2 cup soy sauce
  • 1 Tablespoon grated onion
  • Juice of 1 lemon
  • 2 drops Lemon Vitality™
  • 2 drops Orange Vitality™
  • 1 drop Ginger Vitality™

Directions

  1. Combine all ingredients and pour over meat in a shallow glass bowl or baking pan.
  2. Cover and refrigerate for 1-4 hours before grilling.
  3. Discard marinade after use.

 

Mediterranean Marinade

Ingredients:

  • 3/4 cup olive oil
  • 1/2 cup soy sauce
  • 1 Tablespoon red wine vinegar
  • 1 clove garlic, minced
  • 2 drops Lemon Vitality™
  • 1 drop Oregano Vitality™
  • 1 drop Black Pepper Vitality™

 

Directions:

  1. Combine all ingredients and pour over meat in a shallow glass bowl or baking pan.
  2. Cover and refrigerate for 1-4 hours before grilling.
  3. Discard marinade after use.

Sparkling Ginger Lemonade

No lemons laying around in the kitchen? Use Lemon Vitality oil for a bright, invigorating flavor for this bubbly lemonade.  Lemon Vitality gives this refresher a powerful punch of benefits due to its ability to provide circulatory and immune support.  It gets better!  Ginger Vitality adds a zing of exotic flavor along with the benefit of supporting normal digestion.

*Serves 1

Ingredients

  • 5-7 drops of Lemon Vitality Oil
  • 1 toothpick swirl of Ginger Vitality
  • 1 cup of club soda, sparkling water, water, or Ningxia Zing
  • 2-3 ice cubes
  • 1 Tablespoon of honey if using club soda, sparkling water, or water
  • Mint leaves for garnish (optional)

 

Directions:

  1. Fill your glass with club soda, sparkling water, water, or Ningxia Zing.
  2. Add Lemon Vitality, Ginger Vitality oils and honey.
  3. Stir until well mixed.
  4. Add additional Lemon or Ginger Vitality oil, to taste.
  5. Add your ice and top off with a garnish of mint leaves if desired.

Iced Lemon Pound Cake

Ingredients

  • 1 1/2 cups of Einkorn flour or All-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda 1/2 teaspoon salt
  • 3 eggs, room temperature 1 cup organic sugar or sucanat
  • 2 Tablespoons butter, softened 1 teaspoon vanilla
  • 1/3 cup fresh lemon juice 8 drops Lemon Vitality
  • 1/2 cup coconut oil, melted Optional: 1 cup blueberries, fresh or frozen

Glaze

  • 1 cup powdered sugar 2 Tablespoons milk
  • 2 drops Lemon Vitality

Directions

  1. Preheat oven to 350 degrees. Grease and flour metal or glass 9×5 loaf pan, or use liners in a cupcake tin for cupcakes.
  2. Whisk together flour, baking soda, baking powder, and salt.
  3. In a separate bowl, combine eggs, sugar, butter, vanilla, and lemon juice with a mixer.
  4. Pour dry ingredients into wet ingredients and blend until smooth.
  5. Add melted coconut oil and Lemon Vitality. Mix well.
  6. Fold in blueberries if desired.
  7. Pour into prepared loaf pan and bake for 45-50 minutes or until toothpick comes out clean. If making cupcakes, cook 20-25 minutes or until toothpick comes out clean.
  8. Remove from oven and let set for 3 minutes.
  9. While cooling, prepare glaze in a small bowl.
  10. Remove cake from pan, apply glaze, and allow to cool completely on a wire rack.
